You won’t need a magical phrase to open your mouth for this bread. Toasted sesame seeds in a soft semolina crumb make for an envious loaf. Luckily, this one will be long gone before anyone has a chance to steal it. The Baker’s Percentage for this bread is as follows:
Total Flour 1,000 g 100%
White Flour 500 g 50%
Durum Flour 500 g 50%
Toasted Sesame Seeds 125 g 12.5%
Levain 200 g 20%
Water 700 g 70%
Salt 20 g 2%
At least an hour before you mix the dough, toast the sesame seeds in a skillet over medium heat until they turn light brown. Throw them in at the Mix and continue on through the Bake.
Another great sandwich bread with loads of flavor and a nice crunch. Especially good with goat cheese and roasted red peppers. Open says me!
