True Grit


I’m sure that this hearty bread would have felt right at home riding shotgun on a wagon train heading west. Shot full of whole grains, this loaf is sure to satisfy even the toughest hombre. The Baker’s Percentage for this bread is as follows:

Total Flour                                     1,000 g                           100%

White Flour                                       900 g                             90%

Whole-wheat Flour                          100 g                             10%

Mixed Grains (cornmeal,

millet, oats, cracked wheat)             200 g                           20%

Levain                                                  200 g                           20%

Water                                                   650 g                           65%

Salt                                                         24 g                           2.4%

The night before you mix the dough, make a soaker by placing the grains in a small bowl and pour over enough boiling water to cover. Feel free to use any mix of grains or seeds you like. Cover the mix with a clean towel and leave overnight. When you begin your bread, add the soaker in at the Mix and continue on through the Bake. Depending on how much water the grains absorb, you might need to add more to reach the desired dough feel.
