Something Walnut This Way Comes


Walnut bread is easy to enjoy, but to get the most flavor out of your walnuts, roast them in the oven first. If you notice a purplish hue to the finished bread, that’s normal. The iron in flour is reacting with gallic acid found in walnut skins. The Baker’s Percentage for this bread is as follows:

Total Flour                                       1,000 g                                     100%

White Flour                                         900 g                                       90%

Whole-Wheat Flour                            100 g                                       10%

Levain                                                 200 g                                       20%

Roasted Walnuts                                200 g                                       20%

Water                                                  700 g                                       70%

Salt                                                       20 g                                         2%

Roast the walnuts in a 350 degree oven for about 13 minutes, until lightly browned. Let cool to room temperature. Add nuts at the beginning of the Mix and continue on through the Bake.

This is a great breakfast bread when toasted with a heavy drizzle of honey, but sinfully good as French toast or bread pudding. Good Morning.
